Breakfast: 2x baked eggs with chopped bacon

Lunch: prosciutto wrapped salmon, carrot puree and asparagus

Supper: pork rillettes & salad

Snacks: beef jerky, spicy ribs (see watching the pennies below)

Beverages: lemon juice in water (1), black tea & milk (several), coffee with cream (1), water (3)

Spicy pork ribs

The ribs removed from the piece of belly pork I bought to make the pork rillettes made a tasty snack. I made up a spice mix of oregano, paprika, cayenne pepper, black pepper and Celtic salt; rubbed it into the ribs and then put them into the fridge for a couple of hours to let the flavours infuse. The ribs were cooked, uncovered, in an oven heated to 130 Celsius for 3 hours. I turned them a couple of times while they were cooking. Absolutely Scrummy! PrimalMan was in a state of ecstasy and made lots of enjoying his food type noises.

 In the kitchen:

      • Curing: leg of pork (making air-dried ham)

      • Picking:  radishes, strawberries
